A cuisine mainly using olive oil, garlic, tomatoes and of course seafood, to savour without moderation. A few specialities to sample: Pam amb tomàquet (a slice of bread rubbed with garlic and tomato and sprinkled with olive oil), Sarsuela (a dish of fish fried in olive oil, simmered with chopped tomatoes, garlic, onions, cinnamon, lemon, sherry, bay and paprika, flambéed in rum or brandy), and Fideua (a dish similar to paella, but using pasta instead of rice).
